On this blustery winter’s day in the new year, I have my hands wrapped around a warm cup of Shoshun from Keiko Tea company.
Shoshun is a pre-harvest early spring picking in April from their organic shade grown tea plantations in my favourite tea region of Kagoshima, Japan.
The dry leaves are shiny and slippery dark emerald shards, and the aroma is deep and rich of seaweed- heavenly!
I infuse the leaves in a small glass pot at 65 Celsius for 1 minute, with a brief agitation just before the pour. The leaves are delicate, so a cooler temperature is important here. These leaves can be re- infused a few times thereafter. The liquor is a clear golden green pool, smooth and velvety unlike anything! Fresh and lively and multi- layered, this is a truly sophisticated tea.
